Oatmeal Lemon Crème Bars

It’s finally March! Which means St. Patrick’s Day, Easter, and Spring are all around the corner. What better way to start the month off then with some tasty and buttery Oatmeal Lemon Crème Bars?!

These lemon bars are a play on oatmeal crème pies (which are one of my favorite Little Debbie snacks), but have a punch of tart lemon crème in the middle and pockets of white chocolate chips. I made a double batch of these and brought them into work one morning; by 10:00am they were all gone! Oatmeal Lemon Crème Bars

Makes 16 bars


  • ½ cup butter, softened
  • 1 cup packed brown sugar
  • 1⅓ cups all purpose flour
  • ½ tsp salt
  • 1 tsp baking powder
  • 1/2 cup white chocolate chips
  • 1 cup old-fashioned oats
  • 1 (14 oz) can sweetened condensed milk
    2 tsp lemon zest
    ¼ cup + 2 tbsp lemon juice


  1. Preheat oven to 350 degrees. Grease a square 8×8 baking pan with butter or cooking spray and set aside.
  2. In a large mixing bowl, cream together the butter and brown sugar with an electric mixer over medium speed until crumbly.
  3. In a separate smaller mixing bowl whisk together flour, salt, and baking powder. Add oats to the dry ingredients and whisk to combine. Add the dry ingredients to the butter mixture and mix well. Lastly fold in the white chocolate chips into the mixture.
  4. Press ¾ of the oat dough into the prepared pan.
  5. In a small bowl mix together sweetened condensed milk, lemon juice, lemon zest, and lemon extract. Spread evenly on top of the oat mixture in the pan. Top with the remaining oat mixture by sprinkling over the condensed milk layer and press down lightly until completely covered.
  6. Bake for 20 to 25 minutes or until the top is golden brown (mine took 22 minutes).
  7. Let cool, then refrigerate for at least 30 minutes or until set. Cut into bars and store in the refrigerator.
